One of the most frequently asked questions among those who switch to a gluten-free diet is how to get their recommended nutrients when living gluten-free. We asked resident dietitian and Director of Nutritional Services for Dr. Schar USA, Dr. Anne, to help answer this question in our new video series #AskAnne.
We know it sounds too simple to be true - but to eat a variety of foods from all the food groups with as much diversity in color as possible. The variety and diversity of foods assures a greater intake of varied nutrients. That said, individuals with celiac disease should be conscious of getting enough Vitamin D (10 minutes a day outside), B-vitamins and fiber. For the last two, naturally gluten-free ancient grains provide good sources of both.
